Instructions
In a large mixing bowl, combine 2 ½ cups GF Flour Blend, ½ tsp salt, and 1 tsp xanthan gum (if using).
Add 1 cup cubed & cold unsalted butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ½ - ¾ cup ice water, a tablespoon at a time, mixing until the dough begins to come together. Add more water if necessary.
Once the dough forms, turn it out onto a floured surface and knead briefly until smooth.
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
After chilling, roll the dough out on a lightly floured surface to your desired thickness.
