Equipment

  • Mixing Bowl For combining all your ingredients.
  • Loaf Pan or Baking Sheet A loaf pan helps shape the meatloaf, but you can also free-form it on a baking sheet.
  • Measuring cups and spoons For precise measurements of breadcrumbs, ketchup, and seasonings.
  • Knife and Cutting Board For dicing onions and mincing garlic
  • Whisk or Small Bowl (Optional) To prepare the sticky sweet glaze.
  • Meat Thermometer Highly recommended to ensure the meatloaf reaches the safe internal temperature of 160°F (71°C).

Ingredients

  • 1 pound Ground Beef For a traditional flavor, ground beef is ideal, but ground turkey works just as well if you’re looking for a leaner option.
  • 1 cup Gluten-Free Breadcrumbs These help bind the loaf together and add texture. Certified gluten-free breadcrumbs are a must, but you can substitute with ground oats, crushed gluten-free crackers, or almond flour for added variety.
  • 2 large Eggs Eggs provide structure and keep the meatloaf from falling apart.
  • 1/2 cup Gluten-Free Ketchup Adds a touch of sweetness and moisture to the mix. Check the label to see if it is gluten-free.
  • 2 tbsp Worcestershire Sauce This adds depth and a savory umami flavor to the loaf. Be sure to use a gluten-free version.
  • 2 cloves Minced Garlic Fresh garlic infuses the meatloaf with robust flavor. You can sauté it before mixing for a milder taste.
  • 1 small diced Onion Adds moisture and a slight sweetness. Cook the onion before mixing for a softer, more caramelized flavor.
  • Seasonings Salt, pepper, and your choice of herbs like thyme, parsley, or Italian seasoning.

Instructions

Preheat and Prep

  • Start by preheating your oven to 350°F (175°C). Lightly grease a loaf pan or line it with baking paper so you can easily remove the bread. This prevents sticking and helps you keep the shape of the loaf.

Bake the meatloaf uncovered to allow the top to caramelize. If the top is browning too quickly, you can cover it loosely with foil.
