Ingredients

  • 1 lb chicken breast cut into nugget-sized pieces
  • 1 cup gluten-free breadcrumbs or crushed gluten-free crackers
  • ½ cup almond flour or coconut flour
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika optional, for added flavor
  • 2 eggs beaten (for egg wash)

Instructions

  • 1- Prepare the Coating Stations: Set up three bowls one with the almond flour (or coconut flour) and spices, one with the beaten eggs, and one with gluten-free breadcrumbs.
  • 2- Coat the Chicken: Dip each chicken piece first in the almond flour mixture, then in the egg wash, and finally in the gluten-free breadcrumbs.
  • 3- Cook the Nuggets: You can either bake or fry the nuggets:
  • - To Bake: Preheat the oven to 400°F (200°C). Place coated nuggets on a baking sheet lined with parchment paper. To achieve a perfectly golden brown and fully cooked dish, bake for 15-20 minutes, remembering to give it a flip halfway through. Enjoy!
  • - To Fry: Heat a small amount of oil in a skillet. Cook nuggets on medium heat for 3-5 minutes on each side until crisp and golden.
